Vacuum freeze-drying technology, also known as lyophilization, is based on the principle of pre-freezing a water-containing sample, followed by the sublimation of moisture under a vacuum. The original biological, chemical, and physical properties of the lyophilized samples remain virtually unchanged, making them easy to store for long periods. Upon the addition of water, the samples are reconstituted to their pre-lyophilization state, retaining their original biochemical characteristics. Consequently, freeze-drying technology is widely used in the food, chemical, biological, and other sectors.
